VGNR Dry white wine 2023
Terroir: The vineyards are located near the town of Kavarna. They are grown following biodynamic practices, no pesticides or artificial fertilizers are used. The work in the vineyards is exclusively manual, which allows strict monitoring of the quality of the grapes. The climate is highly influenced by the Black Sea, and the constant breezes have a beneficial effect and protect the grapes from a sharp rise in sugars which helps in keeping the acidity in excellent condition.
Harvest and vinification: Harvest 2021 started on September 7 when the desired organoleptic characteristics of the fruit were reached. Alcoholic fermentation takes place in stainless steel vessels for two weeks and is stopped at the presence of residual sugars around 1.5 g/L in order to achieve a better balance in taste. After that the wine is left to age on the fine lees for 5 months, with batonage every few days during the first month. It is bottled after natural cold stabilization and clarification. A limited quantity of only 800 bottles was produced.
Tasting notes: The colour is pale, straw yellow with delicate greenish hues. The aroma offers pleasant notes of white flowers, stone fruits such as apricot and nectarine, but also of a good ripe yellow apple. On the palate, the wine is fresh, light and airy, with barely perceptible sweetness and velvety softness in the finish and a long aftertaste with slightly hinted minerality.
Food Pairing: This off-the-beaten-path Viognier is perfect for cooling down on a warm summer day. The low alcohol content and the freshness of the taste suggest the appropriate use of the wine on its own, as an aperitif. The combination with light salads with yoghurt dressing, as well as those containing seafood delicacies, is also suitable.
