Terroir: The vineyards are located near the town of Kavarna. They are grown following biodynamic practices, no pesticides or artificial fertilizers are used. The work in the vineyards is exclusively manual, which allows strict monitoring of the quality of the grapes. The climate is highly influenced by the Black Sea, and the constant breezes have a beneficial effect and protect the grapes from a sharp rise in sugars which helps in keeping the acidity in excellent condition.
Harvest and vinification: Hand harvest in mid-September. Alcoholic fermentation takes place in stainless steel vessels for about two weeks. After removing the coarse lees from the wine, it is left to age on the fine yeast lees for 5 months in a clay amphora. It is bottled after natural cold stabilization and clarification.
Tasting notes: The color is pale, straw yellow with delicate greenish hues. The aroma offers pleasant notes of white flowers, stone fruits such as apricot and nectarine, but also of a good ripe yellow apple. On the palate, the wine is fresh, light and airy, with a slightly hint of minerality from the aging for 6 months in amphora. The finish has a pleasant aftertaste, with barely perceptible sweetness and velvety softness.
Food Pairing: This unconventional take on Viognier is perfect for cooling off on a hot summer day. The low alcohol content and fresh flavor make it ideal to enjoy on its own as an aperitif. It also pairs well with light salads dressed with a creamy vinaigrette, as well as those featuring seafood delicacies.
