Dry, red wine, blend of Syrah and Malbec varieties

Terroir characteristics: The vineyards are located in the land of the village of Siva Reka, Svilengrad - one of the southernmost and warmest points of Bulgaria, near the border with the Republics of Turkey and Greece. The Maritsa River, the second largest river in Bulgaria, after the Danube, passes in the immediate vicinity and conditions the terroir of the region, as its course brings the Mediterranean influence on the climate. 10 acres of Syrah and 4 acres of Malbec are the plantations of Seawines Spirit, and the goal is the production of high quality red wines. The soils are mainly alluvial-meadows, which are characterized by a thick humus horizon, accumulating mineral substances every year. Thanks to the warm air masses coming from the Aegean Sea along the river. Maritza, late spring colds and frosts are rare, as well as early autumn frosts and frosts. Another feature of terroir is the lack of rapid and extreme changes over time. All this determines the appropriate conditions for the specific grape varieties characteristic of the more southern parts of France - syrah and malbec.

Grape harvest and vinification: The grape harvest starts at the end of September and is completely manual, which allows the selection of the grapes already on the estate. Both Syrah and Malbec are fermented together in stainless steel tanks. This is followed by aging for about 7-8 months in old and new French oak barrels, after which the wine is bottled unfiltered and aged for another year in the bottle.

Tasting notes: The color is sparkling, deep dark red. The aroma is strongly fruity with a slight sense of peppery tones. The taste is dominated by red berries, characteristic of both varieties. The typical pyrazine notes characteristic of syrah intertwine pleasantly with those of well-ripened blue plum and leather, followed by black pepper and vanilla. The wine has a very well integrated tannin structure and a long finish.

Food pairing: SYRM is an interesting and unusual wine with a rather fresh feel, despite its relatively rich structure and  aromas. Suitable food combinations include roasted red and white meats, dishes with grilled vegetables, as well as various cheeses.
