Hand-harvested in early September. The free-run juice ferments spontaneously in amphora. This is followed by 6 months of aging in the same amphora. Bottled unfiltered and without added sulfites.
Tasting notes: Pale yellow color with a slight orange hue. Rich aroma of pear and quince, with a spicy accent and a subtle hint of rose. Rich flavor with a slight astringency of quince, reminiscent of ripe
apple and yellow pear. A rounded and opulent palate with a delicate mineral finish. A long finish with a hint of ripe quince.
