Ракия Аркана 42% 700мл. + Луксозна опаковка
Pure grape brandy from Muscat Ottonel. The aroma is intense and distinctive for Muscat brandies. The typical notes of rose can be detected, but here in a spectrum of pleasant marshmallow aromas that quickly give way to surprising smoky nuances of sandalwood and sweet spices - cardamom, cloves and brown sugar. The palate begins with a soft and gentle attack that brings a delicate sensation of white flowers, guel leaves followed by softly hinted notes of bergamot, dried apricot and tree bark. The aftertaste is long, layered and leaves a reminder of a pleasant honeyed note on the palate.
Terroir characteristics: The vineyards are located on the low, hilly slopes of the Middle Forest, in the region of the village of S. Lesichovo, between 250-350m above sea level, whose exposure determines the even sunlight. The Topolnitsa River crosses the village in its lower reaches and is a leading factor in the mild microclimate, contributing to the full and timely ripening of the grapes. They are grown organically, without the use of pesticides and herbicides, and fertilisation is by manure and inter-row grassing. The majority of the 134 acres of vines are young - 3-4 years old, just coming into fruiting, but the company also restores old plantings of the Muscat otonel variety (over 50 years old), and owns about 20 acres of well-developed 10-11 year old vines in active fruiting. Located in 4 different locations around the village of. Lesichovo clearly shows the influence of the terroir even at such a micro level. This also contributes greatly to the successful selection of the grapes in the field, in the vineyards - according to the degree of ripening and organoleptic characteristics, which in turn contributes to the separation of the raw material by qualitative and quantitative properties even before the vinification process.
Vinification and distillation: At the end of August and the beginning of September, the grapes are selected entirely by hand and transported to the distillery for further selection before fermentation. Some of the grapes are pressed and fermented in the liquid phase. The remainder of the grapes is crushed, after which fermentation with the zips takes place. This helps to improve the extraction of aromatics during the process and their retention in the wine material undergoing subsequent distillation. The alcoholic fermentation takes place over a period of two weeks, after which the wine material moves on to the distillation stage. The distillation itself takes place in intermittent stills equipped with a column still and a water deflegmator. Distillation is fractional, separating the first, middle and tail fractions. The process has the possibility of adjusting the parameters to achieve a better targeted separation of the middle fraction and to collect a higher quality distillate. After distillation, part of the raw material produced for Muscat brandy goes through a barrel ageing stage of up to 6 months in 225l and 500l Bulgarian oak barrels. The final blend combines 2/3 aged distillate and 1/3 unaged, stored in stainless steel vessels.

Foodpairing: Try Arcana brandy as a stand-alone aperitif or digestif. Go beyond the standard salad pairing and experiment with cocktails (we recommend Rakia Sour, Rakia Merry), as well as main dishes without strong spice flavours.
